I hope everyone has had a great weekend. The weather has been nice so we have been outside a lot. It is also that time of year and my husband is getting ready to do field work. This means that he is in the field until the sun goes down and we eat supper separately. I am trying to plan easier meals for supper during this time so it won’t be too stressful on me. It can be difficult to cook complicated meals when I have a 2 & 3 year old constantly at my feet.
So this is what we are having this week.
Sunday: Baked Liver & Onions (Using 2lbs beef liver, dredged in flour, sprayed with cooking spray and baked in the oven at 375 for 40 minutes; Topped with onions cooked in 2T light margarine)
Monday: Subway (WW Meeting)
Tuesday: Baked Chicken Tacos
Wednesday: Philly Cheesesteak Sloppy Joes
Thursday: Stuffed Pepper Casserole
Friday: Philly Cheesesteak Pizza (Using 2 ingredient dough – 1c self-rising flour & 1c plain nonfat greek yogurt and I use 1T olive oil & minced garlic brushed on the crust before baking; 2oz steakums sliced steak, 4 slices provolone, 5oz Trader Joe’s lite shredded mozzarella cheese, sliced green peppers, sliced mushrooms, and sliced onions)
Saturday: In & Out Burgers
Tomorrow is weigh-in for me so I am hoping it goes well. I have done okay this week, I went over my points several days, but hopefully it won’t be too bad. Have a good week!
